
These lemon bars are the result of my first month of participation in the
Cookie Carnival, group of cookie loving food bloggers who test a new recipe each month and then blog about the experience and results.
Since I love cookies and writing about them, I decided to sign on with the Cookie Carnival and give it a try. The recipe selected by Holly at
Phemomenon was for Toasted Almond Lemon Bars from the
Sweet Melissa Baking Book by Melissa Murphy, a baking book that my cookbook radar has missed until now.
I made several changes to Melissa's lemon bar recipe because of family nut allergies and basic laziness. My version, which I have dubbed Macadamia Nut Coconut Lemon Bars, turned out delicious and were a hit at Easter Sunday dinner. I will definitely be making this version of lemon bars again.
